Vegetarian Paella


Last week I spoke about how to start your meal plan and one of the points I made was to batch cook food when possible. Today I'm going to share a super easy and quick recipe that you can batch cook in less then 5 minutes.

1 cloves garlic
1 red onion
1 sweet red pepper
Half jar of olives
4 spring onions
10 cherry tomatoes
Pack of green beans or sugar snaps
Paella Rice or cous cous

Vegetable stock cube
Salt and pepper
2 tablespoon paprika

Fry the garlic, onion, tomatoes and peppers in a pan with a tablespoon of coconut oil. At the same time, boil green beans seperately. Prepare the cous cous in a seperate bowl (I add a small glass of cous cous with one and a half glasses of boiling water). Crumble with a vegetable stock cube, sprinkle paprika and cover bowl with a plate to help the cous cous absorb all the water.

When the green beans are almost cooked, drain, sprinkle with salt and pepper and add to frying pan. Once cous cous has absorbed all the water and turned a slight reddy colour from the paprika, stir and add to the pan also. Mix them all together, adding the olives for the last few minutes and serve.

I then seperate into tubberware and it's ready to be reheated when I need. It's very versatille, really tasty and has loads of yummy goodness. Make it meaty by adding panchetta or prawns.
